A questo si aggiungono tecnica, temperatura, ghiaccio e diluizione. Anche una variazione apparentemente minima pu\u00f2 cambiare profondamente il risultato finale. Per questo mixology e cocktail sono strettamente legati, ma non sono esattamente sinonimi. Preparare bene un cocktail significa saper eseguire una ricetta. La mixology guarda anche a ci\u00f2 che viene prima: ricerca, sviluppo e costruzione della ricetta stessa. Da dove nasce la mixology? L&#8217;idea di studiare e codificare la preparazione dei cocktail non \u00e8 recente quanto potrebbe sembrare. Gi\u00e0 nell&#8217;Ottocento, con la crescita della cultura del bar e la pubblicazione dei primi manuali dedicati ai drink, iniziarono a essere raccolte ricette, tecniche e proporzioni. Il cocktail cominciava cos\u00ec a sviluppare un proprio linguaggio. Uno dei nomi pi\u00f9 importanti di questa storia \u00e8 Jerry Thomas, bartender americano che nel 1862 pubblic\u00f2 How to Mix Drinks, uno dei primi grandi riferimenti scritti dedicati alla preparazione dei cocktail. Da allora la cultura del cocktail ha attraversato epoche molto diverse. Alcune ricette sono diventate grandi classici, altre sono scomparse, altre ancora sono state recuperate e reinterpretate dai bartender contemporanei. La mixology moderna nasce anche da questa eredit\u00e0: conoscere ci\u00f2 che \u00e8 stato fatto prima per capire dove \u00e8 possibile andare dopo. Dai cocktail classici alla mixology contemporanea Negroni, Martini, Manhattan, Daiquiri, Margarita e molti altri grandi cocktail continuano a essere fondamentali perch\u00e9 hanno strutture precise e riconoscibili. Per un bartender rappresentano quasi una grammatica. Conoscere l&#8217;equilibrio tra parte alcolica, dolcezza, acidit\u00e0 e amarezza permette infatti di comprendere perch\u00e9 determinate ricette funzionano e come possono essere reinterpretate. La mixology contemporanea parte spesso proprio da qui. Un cocktail conosciuto pu\u00f2 essere scomposto, osservato e ricostruito utilizzando ingredienti differenti, senza necessariamente perdere il legame con la struttura originale. \u00c8 uno dei motivi per cui oggi in un cocktail bar possiamo trovare fianco a fianco grandi classici e cocktail d&#8217;autore completamente nuovi. Cosa rende un cocktail un cocktail d&#8217;autore? Aggiungere un ingrediente insolito non basta. Un cocktail d&#8217;autore dovrebbe avere un&#8217;idea riconoscibile e, soprattutto, funzionare nel bicchiere. La ricerca pu\u00f2 partire da un distillato, da un aroma, da un ingrediente stagionale, da un ricordo oppure dalla reinterpretazione di un cocktail classico. Da quel punto inizia un processo fatto di prove e proporzioni. Alcuni ingredienti vengono eliminati, altri modificati. Una componente pu\u00f2 essere infusa, un aroma pu\u00f2 essere utilizzato in una forma diversa, la dolcezza pu\u00f2 essere ridotta o l&#8217;amarezza accentuata. Nel bicchiere dovrebbe rimanere soprattutto un cocktail piacevole, equilibrato e riconoscibile. Mixology a Milano: una cultura del cocktail sempre pi\u00f9 ampia Negli ultimi anni la cultura del cocktail a Milano ha dato sempre pi\u00f9 spazio alla ricerca e alla sperimentazione. Accanto ai grandi classici, molti cocktail bar propongono drink originali costruiti attraverso ingredienti meno convenzionali, tecniche contemporanee e interpretazioni personali dei bartender. I Navigli fanno naturalmente parte di questa scena. Il quartiere rimane uno dei punti di riferimento della vita serale milanese, ma bere un cocktail sui Navigli oggi pu\u00f2 significare esperienze molto diverse: dal classico aperitivo a una drink list pensata come un vero percorso. Ogni proposta possiede una propria identit\u00e0 e mette insieme distillati, ingredienti e riferimenti alla cultura classica del cocktail con combinazioni meno prevedibili. Gin, whisky, tequila, mezcal, rum e vodka incontrano elementi come t\u00e8, foglia di fico, rosa, betulla, mirtillo selvatico, crisantemo, caff\u00e8 e amarena. Alcuni cocktail partono inoltre da strutture conosciute \u2013 dal Negroni al Manhattan, dalla Margarita allo Spritz \u2013 per prendere poi una direzione differente. \u00c8 un modo di intendere la mixology che parte dalla conoscenza dei cocktail classici ma non si ferma alla loro riproduzione.
